At
our processing plant, we do things differently from other
USDA processing plants :
•
Our chickens are hand eviscerated (cleaned by hand). This
results in far less fecal contamination, which is a source
of e-coli and other bacteria.

Our USDA inspector inspects 6 chickens per minute. This also
reduces the risk of product contamination. (The industry standard
is 32 chickens per minute per inspector.)
•
Kadejan chickens are air chilled. The common industry practice
is to chill the product in chlorinated water. Moisture is
absorbed into the chicken during the water chilling process.
The USDA allows processors to sell up to 8% added moisture
in whole chickens. (The allowable percentage of moisture is
higher in chicken parts). Kadejan chicken contains no added
water.
